Chicken ordeal

My sister wanted me to make her dinner for her birthday so I decided to make this roast chicken that I really like but hadn't made in years since it's like an all day affair. My dilemma was finding a place where I could get a whole chicken with the giblets removed. When we lived in our last apartment, we lived near a butcher's that had whole chickens with the giblets neatly packaged in a bag but, unfortunately, I had come across no such place in our current neighborhood. I went to several supermarkets but none sold chickens with the innards removed. I looked up meat places in the phone book and managed to find one in our neighborhood but, unfortunately, they only sell small chickens (I needed a 4 to 5 pounder). Finally, I gave up and went to the local Asian supermarket and convinced the butcher to remove the giblets from the chicken.

How is buying a chicken from an Asian supermarket giving up? Well, at first I was relieved to see the butcher chop off the feet but after he handed the re-wrapped chicken to me, I noticed he had shoved them inside the chicken which required delicate extraction. Then, I noticed a few feather "darts" embedded in the chicken skin which I had to pull out. But the worst part was after taking the chicken out of the styrofoam and running it under the sink, I noticed that the head was still attached to the rest of the body. Luckily, Adam reluctantly agreed to cut it off but it was pretty gross. Let's just hope the final product turns out o.k..
